Personal Mug Cake

Most of my previous recipes are fit to feed a big family like mine, but they don’t work well for only a couple people. So I thought I would do something that is single serving. This mug cake is a perfect for anyone with a sweet tooth. It even has frosting, which you don’t often see on mug cakes. This took me about 20 minutes, because putting frosting on a hot cake is a horrible idea and I had to let it cool.

I used the mug cake recipe from Baking Class, as my base recipe and I altered it slightly by adding a little vanilla and a little baking soda. I made my own frosting by using a couple tablespoons of butter, powdered sugar, cocoa powder, and a splash of heavy cream. In another bowl, I whipped up some heavy cream and folded the two mixtures together. It turned out similar to a chocolate mousse.

Cocoa Cake-in-a-Mug

Ingredients

  • 1 Tbsp melted butter (You can melt this in your mug)
  • 1 slightly beaten egg
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 cup sugar
  • 3 Tbsp cocoa powder

In a microwave safe mug, whisk together butter, egg, and vanilla. Add baking soda, sugar, and cocoa powder. Cook in microwave for 1 and 1/2 minutes or until toothpick inserted in the center comes out clean (mine puffed up really big and then sunk back down, that’s perfectly normal). Let cool in microwave for 2 minutes, then transfer to fridge. (I put a towel under mine, so it didn’t break the glass in the fridge.)

Single Serving Chocolate Frosting

Ingredients

  • 2 Tbsp softened butter
  • 1/2 cup powdered sugar
  • 2 Tbsp cocoa powder
  • 1/2 tsp vanilla
  • 1/2 cup heavy cream

With a hand mixer, beat together butter and sugar. Add the cocoa powder, vanilla, and 2 tablespoons of the heavy cream. In a separate bowl, whip the rest of the heavy cream until stiff peaks. (I did this with the same mixer). A little at a time fold the two mixtures together. Spread on cooled mug cake and eat it up.
